Inspired by Rokujuan tea room, monaka is a delicate, fragrant crisp wafers filled with sweet bean paste. Here it’s filled with Hokkaidō dainagon azuki beans and shiratama — soft, chewy rice flour dumplings — and sure is a perfect companion to a cup of tea.
